Catering......a necessary evil in our business.

I read Mr. Ryan's list of regulations, and I am impressed with the all
encompassing range.  He must have had a good education.

I would also suggest a these two additions

Know who the caterer is and how to contact them.  Also, if there are any
third parties, such as rental companies providing tables, wine glasses, etc.,
know them, too.  I had some very large tables sitting in our museum and
couldn't get in touch with the rental company because the rentee didn't know
which AZTEC PARTY RENTAL CO. sent them.

Also, don't expect historically minded groups to understand museum
regulations.  The Harris County Historical Commission couldn't understand why
I declined their request to light a fire in our historical building, or allow
a musician to play our 1850 grand piano!

Oh and have a good wine pull--you would be surprised how often the museum
professional has to have one, and if it breaks during a special event, your
career could be ruined.
