I would be really interested in hearing what you find out. I am an artist,
and have been working on a project (distantly) related to mapping for a
science museum. One of the things they asked me to think about was GIS - so
I am interested in hearing how people approach it in exhibitions and
education. I think what I read about GIS has had an impact on my project -
but in an indirect way.

It sounds like an interesting project!
