I would suggest "Oral History and Public Memories", edited by Linda Shopes
and Paula Hamilton (Temple University Press, 2008).

Subject: [MUSEUM-L] Oral History Books
Good afternoon,
I am currently coordinating an oral history project for my museum. We have
recruited some volunteers and I would like to recommend some introductory
books for them to read, as most of them have not participated in an oral
history project prior to this one. I've received a few suggestions so far
from people in my community, but I wanted to see what the people of this
list might recommend. Please advise. Thanks!
