Dan,
Not an answer to your question, but a related thought:  We use that word
"interactive" frequently these days, and so do museum visitors and potential
visitors when they participate in qualitative research.  But it turns out
that what they mean by it -- what they're looking for from history and other
kinds of museums -- is as much immersion as interactivity...and, as you
imply, it's not about electronics.  Our focus-group studies for various
kinds of museums indicate that people are looking to the museum to help them
have imaginative, personal experiences with the content, such that they feel
"transported" to a different time and/or place.  So yes, they want to be an
active a participant in the experience rather than a passive observer.  But
they also want to enter into that experience themselves, which requires the
museum to dismantle the "glass wall" or velvet cordon that traditionally
separates the museumgoer's environment from the exhibit environment and,
instead, let the visitor enter that exhibit environment and be surrounded by
it.  That, in turn, requires the museum to adopt a more theatrical and less
narrowly cognitive approach...not easy for most academic specialists.
 
In your example of the covered wagon, that might mean not just loading
supplies into the wagon but getting inside it, feeling first-hand what it's
like to ride in one, what it smells like, etc.  Which suggests that an
immersive environment is inherently interactive, and that interactivity can
be thought of as a sub-type or byproduct of immersiveness.
 
Just some thoughts.  I look forward to seeing what examples people
mention...
