Try the Margaret Husted Culinary Collection housed at
the University of Denver Archives & Special Collections, Penrose Library,
2150 East Evans Avenue, Denver, CO 80208. Steven Fisher is the Archivist
there. The collection contains over 8,000 cookbooks and numerous boxes of
ephemera which may very well contain historical restaurant menus with wild
game dishes.
