I have used both volunteers and staff. I usually set up a log and a two
man saw with a staff person at one end and a visitor at the other, also a
froe and maul to split logs. for a demostration, sometimes with a bench
and drawknife to shape them, a wood lath is neat but too dangerous for
visitors, unless it is a spring pole and no cutting tools. Sometimes have
kids cut a dovetail or two or use a wood plane. all of these tools are
available new or easily made so collection items are not harmed. Hope
this helps.
