Check _Sports Afield_ magazine for wild game food lore.  It's also a great
place to find wild game recipes.  I especially remember the one for bear
steak marinaded in Worcstershire (spelling?) sauce and smothered in grilled
mushrooms and onions, served with wild rice and carrots.  mm-mm good!
There is also an article I remember (ca. 1987-88) about the culinary uses
of dandelions.   _Sports Afield_  is not just a hunting and fishing
magazine, but incorporates a lot of outdoor history and their writing is
environmentally sensitive.  It's a good resource, and if contacted the
staff could prove quite useful in your research.
