You might want to contact the Plimoth Plantation wardrobe department.  The
department outfits all of their first person interpreters and has drafted
patterns from originals.  They have done extensive research on 17th century
costume -- construction techniques, fit, fabric, etc.  They might be able to
assist you.

The contact information I have is for Jill Hall.  I don't know her direct
number, but if you call 1-800-2-MAYFLOWER and enter her last name on a touch
tone phone, you will be transferred to her directly.
