I think averages don't mean that much in this case. Given depth of text, most people will skim the titles and move on and a subgroup will read most of it. It is better to try to characterize what these two groups are doing, their relative size, and their relative importance for your exhibit. I know how you can find studies. Contact Patty McNamara at the Adler Planetarium. She's been in evaluation for decades and can steer you right to a journal article or two. I don't know her e-mail, unfortunately, but the Adler is in Chicago and I'm sure you can get the number from information.
