First off, couldn't help laughing about at the "living history" irony comment...sounds like a great project. What about doing a scavenger hunt, in which the kids have to find the oldest gravestone, most ornate gravestone, simplest gravestone, etc....have them work with their parents, for the oldest gravestone, have them figure out what also happened around the same period in history, if they are too young to write, have them draw it. I think talking about symbols is a great idea....very artistic....teaches children to look at everything to learn shapes and details! Good Luck!
