The argument that the "customers" don't want to deal with a person with a
certain appearance was the same used by shopkeepers who didn't want to put
blacks at the front desk, and by contractors who didn't want to have women
doing their presentations.  Having the staff identifiable to the public, or
in historical or theme-related garb makes sense, as does the prohibition of
offensive slogan T-shirts, but let's not use that first argument.
