In placing interpretive labels, especially large ones, you'd want to
consider not just the average eye height but the field of vision.

Your visual  field reaches only 30 degrees above and 30 degrees below your
eye height. The book "Human Dimension and Interior Space" says that from
tall men to short women, eye height ranges from 56.3 to 68.6 in. (Seated
eye height, i.e., for folks in wheelchairs,  ranges from 28.1 to 33.9 in.)
