Morag, I recommend you get ahold of the proceedings of the MDA/ICHIM
conference in Cambridge two years ago.  They can be obtained from Archives
and Museum Informatics in Pittsburgh, PA.  Their email address is
[log in to unmask]  There are all kinds of interactive programs out there
and the papers address some of the issues studied revolving around their
use.
