For 2 Boston-area SF cons we use systems using metal pipe and peg
board to put up free-standing hangings for art shows in hotel
ballrooms. The pipe is heavy, but everything comes apart and stores
flat. We use zip ties to drape 2 pegboards over one pipe frame. Those
ones are arranged in H or I shaped bays. The hangings used by the
Baltimore area SF con are pegboard and pipe, but they zig zag with a
stabilizing pipe going across the bay, which I think also serves as a
light placement. (It's been a number of years since I saw those
hangings).

Instead of hollow doors, you might consider pegboard sheets fastened on
both sides of 1"x2" lumber. It's not the most attractive of displays,
but it is inexpensive, easy to construct, can be hinged or attached to
each other with ease and provide for easy hanging and rearrangement of
pictures. A coat of paint helps make it look more attractive.
