Check the medievalist listservs like Medtext-l (Medieval codicology and 
paleography nominally, but it's a good, broad list that often deals with 
other topics), Ansax-l has a number of people working on Anglo-Saxon 
hagiography, there's a Medieval Religion listserv, and a Medieval Art 
listserv (I believe). I'd start there simply because there's so many 
medievalists who work on hagiography and iconography, and they can point 
you to the broader resources (most likely).

PS The subject of dismembering codices and selling off folios or bifolia is 
one that is hotly debated in the medievalist community. There are rare book 
dealers who show up at the big medieval studies conference in Kalamazoo, MI 
selling pages. On the one hand, it gives smaller schools a chance to own a 
page or two for their collections or teaching. On the other hand, we lose 
valuable information once that codex has been dispersed hither and yon. 
Now, lest we think that codices have been sacred objects since time 
immemorial, think again: older manuscripts were disassembled regularly and 
used in the bindings of newer books (that's how UConn's Babbidge library 
got one of their folios: they found it in the binding of a 1700s book that 
was being repaired). Also pages were scraped (erased) and written over. And 
texts were constantly being bound and rebound with other texts. But if you 
really want to see some fur flying, post this query to Medtextl and see 
what happens...
