Many email programs (particularly MS Outlook and flavors thereof) will send
an email message in HTML format (like a web page) instead of plain text.
This lets you the email sender add all sorts of colors, bolding, etc.
The list server doesn't pass on the HTML properly, and so what does get
passed on is a duplicate copy of the plain text and the messy HTML with all
the mark-up exposed. (It also causes trouble if the recipient's email
program doesn't do HTML).
Who cares? It causes a lot of clutter, particularly in digests, and makes it
hard for readers to sort through what's a readable message and what's junk.
It also causes unnecessary loading on everyone's servers by bulking up
messages that otherwise wouldn't be that long.
You should be able to find a switch for this in the preferences of your
mailer. I've never missed using it myself.
