The Kellogg Foundation provided a very useful opportunity, years ago, that utilized the staff and others at the Field Museum. It was about exhibit design as a team process. This had a great influence on me and I've used its concepts every since.
Exhibit labels are first written by the content specialist and then worked through/over by the team. The team has a representative from as many areas as fits your Museum (curatorial, exhibits, development, P.R., etc.). I always try to include a non museum person as the voice of the viewing public. The final say (in head to head disagreements) lay with the designated sheriff (can be anyone, but usually is a senior staff). The responsibility for correct grammar and spelling is assigned to a team member. Final labels are a product of this team. On time and on
budget - or you get a different sheriff.
