It depends on the job. If you are going into advertising or marketing, use a sample of an ad you wrote. If you're going into to something technical or academic like a curator or a tech writer, use your dissertation. If you are going into education, submit a lesson plan that you've written. Creative writers should use something like a short story or a position paper. I usually submit a few samples on a variety of subjects to show my diversity and different styles of writing.
