In addition to the books already listed by various respondents, there are two
very good books by Kelley Kindscher, published by University Press of Kansas.
One is "Edible Wild Plants of the Prairie", the other is "Medicinal Wild
Plants of the Prairie." I'm pretty sure both are still in print and they are
modestly priced.
