Concerning wooden shelving offgassing, you might want to consider aluminum
foil with an outer layer of polyethylene sheeting to protect it against
getting torn. Grocery store plastic shelf liners are probably going to
offgas themselves, and there is also the problem of your not knowing
whether they contain plasticizers that will migrate out of the lining and
onto your stuff. Foil is a cheap barrier that will stop anything coming off
your wood without generating problems of its own. I don't know about Tyvek,
but I know regular poly sheeting, while it will slow transfer of gases, is
not impermeable.
