Jennifer,
This comes from our Historic Archaeologist, not from me, but It may help.
She suggests you try contacting Tryon Palace in New Bern, North Carolina.
One of their conservator, Joanna Ruth Harris, specializes in food
reproduction for museums. Here is the link to the Tryon Palace page
http://www.tryonpalace.org/
and here is an article on Faux Foods by Ms. Harris

Hope this helps.

Subject: Faux Chickens
We are in the process of putting together an exhibit, and our design calls
for several frozen chickens. I have tried to locate a source for faux
chickens (raw or frozen), but have only found one company in Britain that
sells them - and they are quite pricey, as is the shipping. We only need a
few, so it isn't feasible to have a company custom-make them for us either.
Does anyone know of a source for faux chickens? Thank you in advance for
your help.
