you might contact a local custom window and door supplier, They could
supply you with safety glass or a plastic sheet in a frame, or as a door
in the opening.
I built a similar set up for an apartment building in Brooklyn Heights
a few years back. These were for out door use and had to be Burglar
proof. You should not need any thing that substantial. Plexiglas and a
simple frame should do nicely.
