Rosemary,

You might want to take a look at *Historical and Philosophical Issues in the
Conservation of Cultural Heritage,* eds. Price, Talley, and Vaccaro.  It was
published by the Getty Conservation Institute in 1996, I believe, and covers
quite a few aspects of conservation.  And of course there is James Beck's
diatribe, *Art Restoration:  the Culture, the Business and the Scandal,"
written with Michael Daley and published in 1993 (not sure of the
publisher).
