Sprinkle.  No question.  There have been enough fires in non-sprinklered
museum buildings to leave no doubt but that they are the wise thing to
install.  If you have any doubts at all, contact Jim Secfik, director of
the Louisiana State Museum (Cabildo fire in ??) or Brad Larson, director
of the Oshkosh Public Museum (museum fire in 1994).  I am sure that
either one of them will give you an earful.
