You may wish to contact the California Science Center (formerly the
Museum of Science and Industry) in Los Angeles.  Many years ago they
invited McDonald's to set up shop in the museum, which included a small
"exhibit" about fast food preparation.  They seem to be the exclusive
restaurant in the facility, so they do major business (I'm sure the
county gets revenues from a lease or commission).

The Bowers Museum of Cultural Art in Santa Ana, California, opened a new
wing a couple years ago that included a gourmet-type restaurant aimed at
an upper income visitor.  They seem to be doing quite well, and from
what I've heard, some visitors come only for the restaurant (and by-pass
the museum!).
