Hi Cheryl,

The journal Museums & Social Issues published a quarterly, What is Race?, Vol. 2 N. 1, Spring 2007.  It looks at how museums approached the topic of race to that time.  I know back issues are available through Left Coast Press.

The American Anthropological Association's exhibit "Race: Are We So Different?" (a traveling show now on view at the National Museum of Natural History) is a good example of an exhibit rooted in current scholarship that is also accessible, informative and engaging to a wide range of visitors from grade schoolers on up.  There is a website that accompanies it.  http://www.understandingrace.org/
