The Amon Carter Museum's Texas Bird's-Eye Views has its own URL (http://www.birdseyeviews.org/index.php).  It includes information on  what they are, how they were created, and a little about the artist who created them, as well as examples.

The Amos Carter on-line info is just the images.  It doesn't say anything about how they were done. :(

"I would recommend he/she look for John W. Reps' Cities on Stone (1976); it is all about the historical origins of bird's eye views as an artistic form. Also the Amon Carter Museum in Texas has over 300 of them and has done an exhibit which can be found online."
