On your way down to/fro Niagra Falls (which is something everyone's got to see once but is quite over-run with tourists and trinket shops)....   You might consider stopping in Hamilton Ontario and seeing the fabulous Dundurn Castle.  When I visited (ten years ago) the offered an neat "upstairs/downstairs tour that compaired and contrasted the lives of the residents and the workers.

Also in Hamilton is a fun steam-powered water works museum.  It (contrasted with the castle) is defiantly a "guy place" but it's impressive in its size -- and the steam powered engines and pumps still work!

Hands down:  get to the AGO, on Dundas St. West.     If you are interested in ceramics, don't miss the Gardiner Museum on Queen's Park (near Bloor, and not far from the ROM), and if you'd like to see something a bit different, the Bata Shoe Museum (327 Bloor) is also within walking distance Queen's Park,  and it's a treasure.   Other than that: Harborfront, the Horseshoe Tavern for alternative and country/folk music, and too many cafes to mention on Queen Street West.
