Check out the Mattress Factory's new in-museum texting application  
that uses Brightkite (info from the creators here: http://artyoucangetinto.blogspot.com/2009/01/two-tweets-passing-in-night-screentxt.html)

It is more general than just about soliciting feedback, but is  
interesting.  One challenge is that people can't just directly message  
in; they have to register for the service.

It is quite easy to create short codes (SMS) for exhibits and then  
invite people to text to that number.  Check out what Brooklyn Museum  
has done with tshirts from Reactees (http://www.brooklynmuseum.org/community/blogosphere/bloggers/2008/12/31/going-paperless-for-1stfans-and-happy-new-year/ 
) powered by Textmarks, which is a service that allows visitors to  
send texts to your custom short codes and then will respond in a way  
that you determine (i.e. thank you message, enter name in database, etc)
