The year profit is the net after all the expenses are deducted from the revenue/sales. Salaries and benefits are part of the expenses to manage the store. Salareis should not be deducted from profits.
 
At the end of every year, when  creating a new budget for the next year, one will forecast how much sales volume is expected for the New Year. One will also forecast how much expenses are expected to incur for the year. But the salary will be part of the expenses and benefits. 
 
Profit can be used as a benchmark in calculating bonuses, and /or other incentives to the employees, not for salaries and benefits.One should not base the salary on the profit as one can not quarantine the amount of the profits in a given time. 
 
As far as keeping the store open, that's a hard one. One important thing is to hire creative people with good marketing and people skills.

Our board is seeking information as to how other Museums handle the accounting of the store manager’s salary and store expenses as related to the year-end profit of the store. 
 
Are the salary and benefits of the store manager deducted from the yearly profits?  Our store manager (probably like many of you) manage the store and weekend staff, provides visitor services, greets customers, monitors security cameras as well as open and close the museum every day.  If there is a problem in the museum (viewed by camera) she takes the correct action. 
 
I look forward to hearing from you regarding your operation… and arguments for keeping a store open.
