For audio cassettes, I have been using iMic

With a software called FinalVinyl

I also use SoundtrackPro for editing.

I was using FormacStudio for converting video analog to digital, but it doesn’t work well anymore and it is not supported.  I am now using a Canon Elura  with a pass-through feature and importing video right into iMovie
