What are the applications you want to launch? This sort of thing is pretty straightforward usually. We ran a number of games and a video through a browser running in kiosk mode (set to launch in kiosk mode on boot up) and had no problems. The activities used Flash and javascript (one made use of a local web server) and the video was a Quicktime movie.
