Our museum is doing this as well...so I'll be looking for suggestions to your query too. But, I did find it helpful to approach the inventory process as part of a 'documentation plan', which I either saw it referred to as such on this list or read elsewhere.
 
So this is what I am doing now in order to establish formal procedures for inventorying, etc., will all be included in the documentation plan.

 We have a rough mechanism identifying areas to be inventoried, but no formal policy.  We are being asked to start documenting our procedures and I would like to see if we can improve our approach.
