If you mount the quilts behind glass, the visitors cannot see both sides.  You can
put a temporary stitch that enables you to run a poll through the material you add on the back of the quilts.   I have seen this method used to display quilts.  
 
I do not know if pressing the quilts between glass would be the best and may harm the quilts.  You would also have more cost involved mounting them behind glass or clear material.
