    I am an MA candidate in Public History in Albany, NY, and have two texts that might be of interest to you.  We used one in my Introduction to Historic Sites Management class last semester, and the other was in the Introduction to Public History class.  Both would have broad application to your curriculum, I think.  They are:

James Gardner and Peter LaPaglia, eds. Public History: Essays from the Field
Sara Dubberly, ed. Organizing Your Museum: The Essentials

Both books are collections of essays that cover all facets of museum operations, which I gather is what you're looking for the text to do.
     On a personal note, I grew up in Fredericksburg, am on sabbatical from Fredericksburg & Spotsylvania NMP, and my sister is in the American Studies Program at MWC.
