I'd recommend the Royal Tyrrell Museum in Drumheller, Alberta but I haven't been to the museum in New Mexico. There is also a Dinosaur Provincial Park (camping) associated with, but several hours drive away from, the museum. Both the museum and the park offer activities like hikes and digs.
