What would be the need to identify "the race" of those
in the photograph rather than their country of origin?

For those who constantly conduct research. For example, if I were looking for those of African descent who resided in my city of residence, it would be very helpful to use a "race" term.  The US census used white, black and mulatto [for any mixed or non-black] for many years, those terms should be included in any searchable catalog.
The use of the words race and ethnicity are contested by different groups, anthropologists, historians..etc. I think it is helpful to create a field in your catalog form that reads race/ethnicity.
