One place to volunteer (besides a museum) is with museum professional organizations.   I personally learned a lot about fundraiser from working on development for the Registrars Committee.  You don't have to be "in charge" -- the Development Officer of many volunteer organizations would be happy to have help keeping track of donors, writing letters and follow-ups.

To be brutally honest, it is unlikely that one does get this experience without volunteering.  Much like aspiring actors/actresses, aspiring museum professionals often need "day jobs" to start.

That is a very good question about how one gets the training in that type of work (fundraising and development), when those jobs require 3-10 years experience, without having to come close to volunteering in that area. I would like to know the answers to that also.
