There've been some interesting ideas here but I have to disagree with those who suggest "rubbings" of cemetery markers.  For a kinder, gentler history have the kids take Polaroids or else use a disposable camera.  Polaroid (sp?) has an educational program that makes this quite affordable.  If that doesn't pan out,  many public libraries have instant cameras that you can check out. (Provided through a Polaroid program.)
