I would suggest making a kaleidoscope would be a good activity...it involves science of perception as well as art.  There's also doll making or stuffed animal making that involves art and toys.

Subject: educational programs dealing with toys

We are doing a week-long summer camp in conjunction with the local science museum dealing with toys in science and art. Does anyone have any ideas for projects involving toys and art that could be done during our section of the camp? Feel free to reply to me online or email me directly. I would be most appreciative. Thanks!
