You might start with Exhibit Builder magazine's source book. It's on line at 
<www.exhibitbuilder.net> They also publish a substrate directory in the print 
version of the magazine. 

As you're in Wisconsin, you might give Great Big Pictures in Madison a call. 
<http://www.gbpinc.com> They offer a wide variety of services and materials 
including direct to substrate printing (durable if overlaminated) and printing to 
fabric. I've found Masonite, a slightly old fashioned material, to be a durable 
substrate. It can be heavy, however. Sintra and other plastics are light but 
can shatter. I wouldn't choose Gatorfoam (tm) for a traveling exhibit. It's very 
fragile; corners get bent and broken and it dents too easily.
