I would suggest you contact Tina Bates, a noted historian on staff of the
Canadian Museum of Civilization. Among other things, Tina is an authority on
both late 18th and 19th century costume and has published at least one cookbook
of 19th century Ontario recipes. I am not sure if her email address is:

I would be surprised if Tina can't help you. Her knowledge is truly
encyclopaedic and she's one of the most helpful people I've ever met!
