HERE'S an Australian recipe for "Rabbit on a Shovel" that we're very fond
of at the Historic Houses Trust of NSW.

1 Rabbit
2 spoonfuls of margarine
2 spoonfuls of salt
1/4 cup of vinegar
1/2 bucket of water
1 steel shovel

1. catch a rabbit
2. skin, gut, rinse and quarter it
3. soak the rabbit in bucket of water with vinegar added
4. light a campfire and allow it to burn down to coals
5. put the shovel on top of the fire
6. when hot, add margarine to shovel
7. fry rabbit in shovel until tender
