There is no way of placing an "unlimited space" on the screen. However,
you can cram in a lot of text by using a large desktop size (1024 by 768
or higher), and by selecting a small font size.

Either of the following products would meet your needs. They provide for
simple databases, spreadsheets, and word processing.

1. Clarisworks for Windows

2. Microsoft Works for Windows

They will allow you to make lists of thousands of items in FLAT FILES.

That means: no automatic relational links between tables.

However, you can make manual references between multiple tables by using
cross-reference codes of your own design.

For example, suppose you build two lists: (1) a list of donated
artefacts, and (2) a list of names and addresses. You could give each
entry in the name-and-address table a recognisable name code, and then
use that code to identify donators in the artefact table.

I would suggest, however, that you think of your longer-term needs
before going too far. Most of us do this sort of thing using a
RELATIONAL DATABASE. (Sorry for the technical term.) Such a program
offers the benefit of automatically linking data in many tables. It cost
more than $100 and takes more expertise to set it up, but is by far the
preferable choice for jobs where many work-hours are to be devoted to
data gathering and data entry.
