I think this question has a lot of interesting potential for discussion, but I'm still not sure what you mean! What WOULD you "do to a visitor" in a museum exhibition? The example of the Carsten Holler show is a good one, especially since you needed to sign several release forms to participate in the interactive components. But, I'm not sure is as much a question of ethics as it is of liability.
