I was formerly employed at a Museum that operates an annual antique fair with great success.  They work with a regional group of antique dealers who pretty much coordinate the entire thing.  Booths are set up on the grounds or parking lot, well away from any of the exhibit space.  This is probably the key issue .. this event will need to be held either outside of your building or in an auditorium like setting that will create complete separation from the collections.

The event includes not only antique booths, but food vendors, musical performances, and historic craft demonstrations.  I would guess they have 5000+ visitors during the weekend.
