For a historic site or museum I would recommend that an alcohol policy includes the following elements

	1.	Anything you need to do to comply with your local law and any licences/permits
	2.	The type of event at which you allow alcohol   (e.g. we allow wedding receptions but not birthday parties which are more likely to get out of hand)
	3.	The types of alcoholic drink you allow   (e.g. we don't allow red wine in buildings because of the danger of staining historic surfaces, we do allow it in marquees; you might allow wine and beer but not spirits)
	4.	Which parts of the building you allow alcohol to be served and consumed in (e.g. we restrict service and consumption to areas where we can control the risk of damage)
	5.	How you allow alcohol to be served (e.g. we don't allow cash bars and it has to be served by catering staff who have read our policy; we don't allow ice buckets)
	6.	What protection needs to be put in place prior to an event (e.g. druggets, spill kits, surface protection)
	7.	How to deal with guests who start to behave inappropriately
	8.	How to respond to spills

It might well be that you have different rules for events in different types of space (historic spaces, you café or a marquee).
