Chris,

I have had the same experience.  In a word of advice, GET OUT, now.  They will use you for as long as they can and you will not get a job out of it.  I know this is hard to hear, I've been trying to get a full time job at a museum for years.  It seems to me that volunteering will get you no futher with the organization.  Good luck in your hunt.
