Kari,
We do this. I just take regular ears of corn from the grocery store or
farmers market then pull back the husks, remove the silks and let the
ears hang up to air dry for a couple weeks. Then you just sort of twist
off the kernels. Once the kernels are completely dry you can store them
in a jar or plastic container. It seems to work fine.

The best stuff I ever got was from a farmer who gave me a dozen ears or
so of his heavy corn from late in the season. It may have been more
like feed corn. I'm not really sure as I don't know a whole lot about
corn varieties. I suppose you could also buy the "Indian" corn they
sell in the grocery store around Halloween which is already dried.

Subject: grinding corn

Does anyone have a mano and metate they let people use? What do you use
for corn? Popcorn, feed corn? I need a cheap source, and don't tell me
to grow it - the bunnies ate it all!
