John,
I know of a work depeicting an Osage Indian, but not of the fort itself.
George Caleb Bingham would be an obvious possibility, but that dates you
want are wrong.  Bingham wasn't active until mid-century.  You might contact
Mo Historical Society Library in St. Louis.  They have just about anything.
;)
Also, George Caitlin was in St. Louis doing "indian pictures" by about 1825.
  His work tends to be more landscape oriented than Bingham's.  Several of
Caitlin's works from that period are in the Smithsonian.  You might have to
do some heavy-duty research to correlate some of his images with the Fort
Osage area. Hope this helps a little.
